There are a number of solid Thai restaurants in Vancouver, Urban Thai Bistro, Thai House, Charm Modern Thai to name a few, and it just so happens that these are owned by Desmond Chen. Pink Thai Elephant is the newest addition to the Thai House family and it's certainly welcome to Vancouver's culinary scene. In the kitchen, they represent many regions of Thailand and this translates well when it comes to serving guests a wide variety of dishes that boast intensely delicious flavors. The menu caters to sharing plates with friends and it's ideal because there are so many dishes on the menu that are worth trying. If you're looking for something fresh and light, order the Pla - Salmon and enjoy the fresh flavors of lemongrass, lime juice, sliced apples, crisp lettuce and cashew nuts. For something a little more rich, try the Coconut Curry with braised oxtail and pumpkin. It's got a little bit of heat, but the creamy coconut base brings it down a notch. Another delicious item is the Keang Panang Pla, which is similar to the Coconut Curry, but is made with salmon. The Pad Thai at Pink Elephant Thai has set the bar high compared to many other Pad Thai dishes because they use traditional tamarind and kick it up by adding soft shell crab or tiger prawns. Go with friends, order a couple of different items and take in the chic atmosphere of high ceilings, clean white walls and fun pink leather chairs and booths. They have customized their music playlist and the result is fun and sexy, yet chill.
