Mediterranean food is the name of the game in Tunis, and that involves open air, olives and couscous. Inspired by their European neighbors up north, they've taken a lot of influence of Tunisian historical dishes that are famous throughout the African and Mediterranean world and added a lot of French to their dishes after Tunisia's bout with Colonialism. Fish are of course a big part of the equation with their seaside location, and because the local economy of Tunis still powers many of its businesses and restaurants rather than chains and corporations, getting a fish caught in the afternoon to your plate for dinner is a very likely proposition. While dining out isn't as open as European culture, Tunis still has many restaurants with Western credentials, many run by chefs from France, so you'll be in good hands when you eat in the city.
