One of Salta's most popular restaurants also happens to be one of its most reliably excellent. As you walk in you are treated to appetizing scenes of roast meat on grills and on a traditional spit, and as soon as you are seated you will be offered a glass of sparkling wine on the house, plus appetizers such as beans and chilli sauce. The menu is more of an album, with long lists of offal and meat cuts that come fresh off those grills. Trout looms large, again with several different sauces or preparations. Rabbit, chicken and pork are further options but you might also like to try northern specialties such as empanadas (pasties) or humitas (creamed corn cooked in the husks). The desserts are the traditional ones, such as flan or fruit salad. Everything is served professionally and with a smile – the decor is typical northern style, with painted animal masks adorning the colonial-style walls.
