Rome is its own country, so the saying goes, and there is no better representation of that Roman flair than in local favorite neighborhoods, Trastevere and Testaccio, often known for representin the "real" Rome. Though coat and tie should definitely be left alone, don't mistake casual and local for low end. Both Testaccio and Trastevere restaurants have received Michelin nods (at different times)-- such as Glass, Ferrara and Antico Arco, and as well as praise from top chefs Mario Batali and Anthony Bourdain who love Roma Sparita and Checchino al 1867. For those wanting a truly Roman experience, dar Poeta, da Augusto, da Lucia, Volpetti Piu and Remo, where fashion does not need to mix with foodie.
