To get off the beaten path in Perth at night, it's simply a matter of turning down a smaller alleyway in the city centre or venturing out into the suburbs. Western Australians love to go out for a beer so ask around for recommendations on pubs where the beer isn't it at tourist prices, or simply drive out in the suburbs and find a fun sports bar or a pub at the local shops. For non-tourist night clubs, again try the suburbs or just try walking through Northbridge at night with your eyes open for smaller, unique clubs. If you're keen on some live music, check the street press for tips on local bands and their gigs, and if theatre is more your thing, try some of the smaller experimental theatres for budget entertainment and a great night out.
