La Fonda el Refugio is traditional, classic Mexican food, no frills, no fusions, no contmeporary twists to be added, yet the 40 years history of the restaurant make it a top priority for tourists wanting a simple, predictable Mexican meal with fresh ingredients. The restaurant prides itself on "tradition" which means upkeeping old, time weathered recipies for everything from the hand made tortillas, the huge variety of fresh salsas, and the incredible pultry and meat dishes. Even the kitchen staff retain uniform designs worn by their colleagues back in colonial times, and many of the dishes are still prepared in ceramic pots. The colourful interior and exterior is reminiscent of an old town hacienda.
