Hiking is one of my very favorite activities and I live in a true paradise for this. My choices here are ordered by difficulty and distance. Hiking or just slowly promenading along Lake Geneva is a must. Some people hike all around the entire lake but there are many sections of it on which you can focus such as Ouchy. But Morges is also a good lakeside walk. You could even walk from Lausanne to Morges in about 2 beautiful hours and take the bus back.
Then going a bit uphill are the vineyard hikes and always try to stop in Grandvaux Village for the view of a life time.
The countryside is also nice with lots of trails and farmland. Just take a short train ride L.O.B (Lausanne-Echallens-Bercher) and follow the hiking trails.
Over above Vevey there are some excellent hiking areas. Firstly up to Corsier to visit Charlie Chaplin's tomb and the hillside but also you can hike up Mont Pelerin (or take cable car and hike when you get up there).
Take the M.O.B. (Montreux-Oberland Bernois) cogwheel train from Montreux up to Caux (the next stop "Hauts-de-Caux" is where the trailheads are located). For a short distance going towards Liboson, the road is even paved with benches to sit and stare at the view. If you are ready for more, continue on up to Rochers de Naye (about another 2.5 hours). Wear sturdy shoes as it's rocky. Once you get to the top, you can see practically the entire country of Switzerland. You could also take the train and walk down (only 1 hour). Happy Trails!
