The food offering in Istanbul varies immensely as does the culinary influences from a great many and diverse civilizations. The culinary influences on the Turkish traditional cuisine -which descends from the Ottoman- is a fine blend of Mediterrenean, Middle Eastern, Aegean and marine influences.
On the one hand are great vegetable dishes soaked in virgin olive oil in the Aegean region. These couple with fresh fish from the four different Sea coasts: the Med, Aegean, Black and Marmara Sea.
Going south and east, we have the actual kebab culture. This is spicy, heavy and buttery. Kebab, as you probably already know, is one of the most well-known local cuisine types.
There is yet another and a specific category known as "home-cooking". Home-cooking refers to dishes cooked inside pans and pots with water and herbs. To get a real taste of this kind of cooking you will have to visit a friends' home... Or, you will have to find a friend or a friendly someone to teach you to cook these flavours.
