Steamed pork dumplings, now so popular they can be found in many Cantonese restaurants, far exceeds expectations. The meat was lean without being dry or tough, the wrapping thin but not sticky and the dumplings filled with hot tasty soup stock that wasn't tongue-scalding, as so often happens.
