If you were to pick an outlying island to visit then try the bars at Yung Shu Wan at Lamma Island. Both the Diesal Sports Bar and the Fountain Head are the watering holes for the tightly knit Lamma community and the service is friendly.
Mui Wo on Lantau Island is home to both the China Bear and the Hippo Bar. They are not meant to blow you away but the beers are cold and the food is good if you just want a quick place to stop by on your visit.
Good thing the arena at the Asia Expo on Lantau Island hosts such good concerts at its multi purpose arena. You'll see international pop stars as well as local Asian pop stars perform here so nightlife doesn't have to always have to revolve around bars and clubs.
The Oyster Bar at the Hong Kong international Airport is one of the best bars in the airport to get drinks before taking off.
