El Bolson has an unusually high number of good restaurants for a small Patagonian town. This has to do with the availability of locally-grown produce and high-quality meats year-round, as well as the blend of culinary traditions from the area's original inhabitants, mixed with the later waves of people who migrated here from Buenos Aires.
The classic Patagonian dish is cordero, or lamb, flayed and roasted over a fire, with minimal seasoning (usually just salt), and chimichurri sauce to taste. This is found at Parrillas throughout El Bolson.
