Day 1 - Cancun
The Fiesta Americana Grand Coral Beach is right in the middle of Cancun's action within walking distance of many of the exciting downtown spots, but is its own oasis of serenity. The rooms are huge and clean, and all have balconies and spectacular ocean views. With a couple of great restaurants, multiple warm pools and a calm private beach, this is a perfect introduction to the luxuries that Cancun has to offer. Check in, then jump right into the water with training (if you need it) and a dive with Nautilus Dive Training Center, Cancun's most friendly and reliable company. You'll get a lesson or quick refresher in a hotel pool, then jet off on a quick boat ride to dive at some of the beautiful reefs, wrecks, and other spots in the area, all of which have incredible sealife. After you're back on land and have rinsed off, head to Laguna Grill for an early dinner, where the excellence of the creative Asian-Mexican fusion cuisine is second only to the setting in a tropical garden overlooking the lagoon. Take an evening tour after in a yacht hired at Gran Marina de Cancun for a beautiful way to relax on the water after your active first day.

Day 2 - Cancun
Take a morning ferry to Isla Mujeres for the day, where there's a huge range of activities in and out of the water. Snorkeling or diving among the reefs here is a must, as is a boat ride through the mangrove forests of the Garrafon Eco Park. At Garrafon Park, you can also snorkel, hike, kayak, ride a zipline, or just relax in a hammock on the beach. Have lunch at any of the restaurants on Isla Mujeres - Mango Cafe and Qubano are particularly good, though. Also visit the national park on Isla Contoy, strictly regulated and monitored as this is one of the most important bird nesting and migration sights in Mexico, and where you can tour through the park by boat to see the incredible wildlife here. Take a late afternoon ferry back to the city, then get ready for dinner at Crab House. Overlooking the lagoon from a beautiful terrace, this restaurant is one of Cancun's finest. The shrimp cocktail and stone crab are particularly good.

Day 3 - Cancun
Head west of the city for a day trip to visit Chichen Itza, incredible Mayan ruins that were recently named one of the seven New Wonders of the World. There's the most famous main temple (El Castillo), as well as other temples, baths, a ball court, sacred caves, and other structures. There are plenty of friendly guides who don't charge much for their services who can be found in the museum and are great at providing historical information about the site. It can get hot here during the day, so bring water and sunscreen. You can get lunch at Hacienda Chichen, which serves fresh regional fare on a beautiful ancient terrace. Head back toward Cancun in the evening, and have dinner at La Joya at the hotel. The first restaurant to get AAA's highest ranking, La Joya is Cancun's most elegant Mexican restaurant and has incredible local food and tequilas.

Day 4 - Cancun
Travel to Rancho Loma Bonita in the morning, where there's tons to do. Go horseback riding along the lagoon and through the mangroves, and take the combination ATV-jetski tour of the beautiful beaches here. There's a good picnic lunch provided, and water is available here as well. It's best to bring proper riding clothes (long pants, etc) to change into if you're planning on riding, and definitely bring sunscreen, too. In the afternoon, get back to Cancun for an afternoon wreck dive with Solo Buceo, incredibly professional and knowledgeable about the wrecks and reefs in the water off the hotel. It's worth it to travel a bit out of the tourist area to have dinner at Yamamoto, where the sushi is so fresh, and everything else is authentic Japanese and delicious as well.

Day 5 - Cancun
Another must-do day trip is a visit to Selvatica, where you can explore the rainforest in a number of incredible ways, including by zipline and by bridge and high-rope aerial tour. The guides are all very outgoing, friendly, and so knowledgeable about the native flora and fauna. There's also a cenote to visit, dune buggies and bikes to ride, and much more. Lunch, several delicious local dishes, is included with the day's activities. Bring some long pants and tennies to change into. When you get back into town, visit La Habichuela for dinner, a charming local place with a gorgeous garden patio setting and a unique twist on traditional Mexican cooking.

Day 7 - Cancun
Go to the Sian Kan biosphere for the day with Ecocolors, one of the most responsible and fun ecotour groups around Cancun. Near Tulum, you'll explore jungles, lakes, rivers, ruins, and a cenote, all with the highly informed commentary from their excellent tour guides on local history, culture, and flora & fauna. Ecocolors works with local communities to promote sustainable conservation, and always make sure to minimize the impact of their tours on the incredible wilderness you'll explore with them. Grab lunch at a great local restaurant, Ana y Jose's, in Tulum. Back in Cancun, try some Argentinean delicacies and wines at your final dinner at rustic yet elegant Cambalache. The barbeque here is particularly good, as is the churrasco.
